Preheat oven to 400°
Peel, wash, and cut potatoes into bite-sized pieces. Put into a large bowl.
Dice onion.
Dice Beasley's Smokehouse Sausage.
Combine all together: the potatoes, onion, and sausage. Season with salt and pepper to taste. Pour into a well-greased baking dish.
Scatter cream of mushroom on top.
Bake uncovered for 60 to 75 minutes, till golden brown on top, I even like mine just a little bit crispy.
Serve with a pan of cornbread, or biscuits.
